Baking | Lemon Drizzle Cake


I rarely bake, but I decided to give this a go after seeing a video on YouTube. My fiancé helped me and I have to say, it was so lovely baking together. We're definitely going to do it more often! We've already decided on loads of thing we'd like to bake, which I'll hopefully feature on the blog soon. This lemon drizzle cake was so easy to make, and it tasted amazing! My fiancé thought the lemon was a teeny bit too strong, so we're going to make half the amount of drizzle next time. Now, onto the cake...

Ingredients:
1 tsp baking powder
170g self-raising flour
170g caster sugar
170g butter
3 eggs
110g icing sugar
2 lemons


Method:
1. Sieve the flour, caster sugar and baking powder into a mixing bowl, and add the eggs, butter and the zest of two lemons.
2. Whisk it all together (electric whisks are a godsend!)
3. Pour the mixture into a baking tin, and bake for 30-45 minutes at 180°C.

4. When the cake is ready, make the drizzle by mixing together the icing sugar and the juice of both lemons, in a bowl. The drizzle will be a kind of watery texture, but not as thin as water.
5. When your cake is cooked and still hot, poke it in random places with a skewer or knife (preferably a skewer), and pour on the drizzle. Let it soak in for a minute or two while you make yourself a nice cup of tea... easy!
